Use of Avicenna Saffron in your New Year’s Lemon Cake Recipe

The Holidays are around the corner, actually we’ve passed couple of the already, but yet, the best time of the year is coming to us. Now it is a good time to prepare for this special occasion and make Cake for yourself and your loved ones. Below is a very famous Lemon Cake specialized for the Holiday Season. We hope you enjoy this holiday cake during the holiday season with your loved ones.

Ingredients:

  • 1/4 teaspoon Avicenna Saffron threads, steeped in 2 tablespoons warm milk.
  • 2 cups all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup unsalted butter, softened
  • 1 1/2 cups granulated sugar
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup sour cream
  • Zest of 2 lemons
  • Juice of 1 lemon
  • Powdered sugar for dusting

Instructions:

  1. Preheat the oven to 350°F (175°C). Grease and flour a bundt cake pan.
  2. In a bowl, whisk together flour, baking powder, baking soda, and salt. Set aside.
  3. In another bowl, cream together butter and sugar until light and fluffy.
  4. Add eggs one at a time, beating well after each addition. Stir in vanilla extract.
  5. Mix in the dry ingredients gradually, alternating with sour cream.
  6. Fold in lemon zest and juice until the batter is well combined.
  7. In a small bowl, steep Avicenna Saffron in warm milk and let it sit for a few minutes.
  8. Gently fold the saffron-infused milk into the batter until evenly distributed.
  9. Pour the batter into the prepared pan and bake for 45-50 minutes or until a toothpick comes out clean.
  10. Allow the cake to cool, then dust with powdered sugar before serving
